Linux build package all dependencies except zenity

As discussed in calref#373, the Linux build should contain all the library dependencies, excluding zenity, either dynamically or statically. It should be tested launching from an itch install.

This will probably be closed in a branch of this fork before being contributed upstream, because I'm making my own new github workflow for release builds and it's pretty messy for now.
