Upgrade Postgre DB from current version 11 to latest 14
Also check if newer version of PostGis is available, upgrade
Also upgrade pgAdmin image

Maybe use this opportunity to:

simplify the DB schemas to reduce storage demand (this would mean messing around with Python classes and lots of testing, quite big work)
implement an automated deployment method (Ansible, or just docker-compose with shell scripts?)
