Grilled Pineapple Pear Salsa

Ingredients

  • 1/2 ripe pineapple, trimmed and sliced
  • 1 large medium-firm pear sliced into 1/4 inch slices
  • 1 large red bell pepper, seeded and quartered
  • 1/2 small red onion, peeled and cut in half (so you have 2 quarters of a whole onion)
  • 1 jalapeno, diced
  • 1/2 cup loosely packed cilantro, finely chopped
  • 1 tablespoon lime juice
  • 1/8 teaspoon ground ginger
  • 1/8 teaspoon ground cumin
  • salt and pepper to taste

Instructions

  • Sautee red onions, pineapple, red bell peppers, pears, and jalapeno in olive oil on high heat. Do not move vegetables and pineapples around until they're slightly charred and caramelized.
  • Once the above ingredients are caramelized and charred, take them off the heat and place them in medium bowl.
  • Mix in cilantro, lime juice, ground ginger, ground cumin, and salt and pepper.

Can be eaten immediately but it is best served chilled.
