Ingredients
- 1/2 ripe pineapple, trimmed and sliced
- 1 large medium-firm pear sliced into 1/4 inch slices
- 1 large red bell pepper, seeded and quartered
- 1/2 small red onion, peeled and cut in half (so you have 2 quarters of a whole onion)
- 1 jalapeno, diced
- 1/2 cup loosely packed cilantro, finely chopped
- 1 tablespoon lime juice
- 1/8 teaspoon ground ginger
- 1/8 teaspoon ground cumin
- salt and pepper to taste
Instructions
- Sautee red onions, pineapple, red bell peppers, pears, and jalapeno in olive oil on high heat. Do not move vegetables and pineapples around until they're slightly charred and caramelized.
- Once the above ingredients are caramelized and charred, take them off the heat and place them in medium bowl.
- Mix in cilantro, lime juice, ground ginger, ground cumin, and salt and pepper.
Can be eaten immediately but it is best served chilled.
