- Basic Shredded Chicken but substitute Boneless Chicken Thighs for Chicken Breasts.
- Mango and Avocado Salsa
- Monterey Jack Cheese (optional)
- Flour Tortillas
- Season chicken thighs with salt and pepper and brown in a large skillet on medium heat.
- Cube the browned chicken thighs and return to the pan.
- Add spices from Basic Shredded Chicken recipe.
- Simmer on low heat until chicken is cooked through.
- Serve Chicken on warm Flour Tortillas with Mango Avocado Salsa and Monterey Jack Cheese.
