When we have nodes that are

not boundary nodes, and
have only one neighbor
Then we should contract them to that neighbor. We should
transfer population, area, and any other 'tally'-type statistics to the neighbor, and
not transfer perimeter.

We can just pass a list of the columns that we want to carry over.
