- 2 teaspoons active dry yeast
- 1 ½ tablespoons granulated sugar
- 1 ¼ cups warm water (could be ± ¼ cup depending on flour/humidity)
- 3 ½ cups bread flour
- 1 ½ teaspoons salt
- 2 tablespoons baking soda
- 5 strips of thick cut bacon
- 1 ½ sharp cheddar cheese
- Mix warm water, yeast and sugar together in a bowl and let sit until foamy.
- Mix the flour and salt in with the water. The dough should be moist and firm.
- Knead the dough for 15 minutes
- oil the bowl and place the dough inside and cover with a lid or towel.
- After the dough has doubled (should take about an hour) punch down the dough then let it rest 10 minutes.
- cut the dough into 6 pieces and shape them into balls
- press your finger through the center of a dough ball and shape it into a ring. Do this for all 6.
- let them sit for 10 minutes
- Cook the bacon, shred cheese and mix them together.
- Fill a pot with water and add baking soda, turn the stove on high
- When the water is boiling, add a bagel to the pot and cook for 2 minutes a side. Boil each bagel and place them onto a greased baking sheet.
- Cover the tops of the bagels with the cheese/bacon mix
- Cook at 425F for 20 minutes
