Cheddar Bacon Bagels

Ingredients

  • 2 teaspoons active dry yeast
  • 1 ½ tablespoons granulated sugar
  • 1 ¼ cups warm water (could be ± ¼ cup depending on flour/humidity)
  • 3 ½ cups bread flour
  • 1 ½ teaspoons salt
  • 2 tablespoons baking soda
  • 5 strips of thick cut bacon
  • 1 ½ sharp cheddar cheese

Instructions

  1. Mix warm water, yeast and sugar together in a bowl and let sit until foamy.
  2. Mix the flour and salt in with the water. The dough should be moist and firm.
  3. Knead the dough for 15 minutes
  4. oil the bowl and place the dough inside and cover with a lid or towel.
  5. After the dough has doubled (should take about an hour) punch down the dough then let it rest 10 minutes.
  6. cut the dough into 6 pieces and shape them into balls
  7. press your finger through the center of a dough ball and shape it into a ring. Do this for all 6.
  8. let them sit for 10 minutes
  9. Cook the bacon, shred cheese and mix them together.
  10. Fill a pot with water and add baking soda, turn the stove on high
  11. When the water is boiling, add a bagel to the pot and cook for 2 minutes a side. Boil each bagel and place them onto a greased baking sheet.
  12. Cover the tops of the bagels with the cheese/bacon mix
  13. Cook at 425F for 20 minutes
