Cannot see all values when editing config

Describe the bug
Internal reference: SURE-9817

After upgrading to Rancher 2.10.2, additional values like etcd configuration and vsphere addon config do not load in the UI but are available in the yaml

Difficult to repro outside of initial reports.

Actual behavior:
Cannot see etcd config for existing clusters. New clusters work fine

Expected behavior:
Can see etcd config

Notes:
@codyrancher noted this may be partially expected but the reason etcd fails to render is because the backend no longer provides the version info for the given k8s version in the latest release. This results in the UI attempting to lookup the serverArgs but there's no info provided.
