README description about UUID type may mislead

Hi, great to finally see a UUID Version 7 implementation in Java!

I'd just like to raise awareness of a lack of clarity in the documentation.

This library brings the class ellog.uuid.UUID, but this is not explicitly stated in the README. This makes the descriptions unintentionally misleading. Java developers know of the existing java.util.UUID class will be thrown off or confused about new functions or compatibility with an existing code base.
