time machine exclusion updates

A few updates needed for our time machine exclusions:

• There is some sort of race where we can add time machine exclusions during startup while our logs are being rotated, frequently breaking the tmutil calls which glob then attempt to exclude a file which no longer exists
  • we don't need these to be excluded, they can just be rotated over if restored
  • this just removes that pattern from exclusion
• We now have launcher.db.bak.X files which should be excluded
  • this loosens the glob pattern to include those
