Pan-seared salmon | ||

__Ingredients__ | ||
|
||
* 1½ pounds (680g) fresh salmon filet | ||
* Salt | ||
* Pepper | ||
* Butter/ghee/vegetable oil | ||
|
||
1. Cut the salmon into 1x1 inch cubes (or any size that you think is a good moutful). | ||
2. Pat the cubes dry and season with salt and pepper. | ||
3. Heat about a tablespoon of butter/ghee/vegetable oil in a skillet over medium-high heat. Add the salmon and turn heat to medium-low. | ||
4. Fry the salmon until cooked through, about 4 minutes depending on the size. |

In a bowl, combine: | ||
* 2 cups diced ripe mango (about 2 mangos) | ||
* ½ cup finely diced red onion | ||
* 1 cup diced avocado (1 medium avocado) | ||
* ¼ cup minced fresh cilantro | ||
* 2 tablespoons extra virgin olive oil | ||
* freshly ground black pepper | ||
* big pinch of salt | ||
* ¼ teaspoon red pepper flakes | ||
* Juice from 1 lime | ||
